„Wake me up“ (coffee-pancakes with raspberry-chia-filling)

Coffee-Pancakes with raspberry-chia-filling

Recipe

  • Mix 120 of flour with ½ tsp. baking powder and ½ tsp. baking soda and stir in 100 ml milk.
  • Add 20 g sugar and 1 pinch of salt.
  • Stir in 100 ml cold black (strong!) coffee and 50 g quark. At the end add 2 eggs.
  • Let it rest for about 15 minutes.
  • Fry the pancakes in a pan with vegetable oil.
  • For the filling take about 200 g raspberries (fresh or defrosted) and mix them with 2 tbsp. chia. Let it rest for about 30 Minutes.
  • Arrange the pancakes in a pile and add the filling between the pancakes.
  • Decorate with filling and raspberries on top.

Kaffee-Pancakes mit Himbeer-Chia-Füllung

Rezept

  • 120 g Dinkelmehl mit ½ TL Backpulver, ½ TL Natron vermischen und dann mit 100 ml Milch verrühren. 20 g Zucker, 1 Prise Salz dazugeben. 100 ml kalten Kaffee (stark) und 50 g Speisequark einrühren.
  • Zum Schluss 2 Eier unterheben.
  • Teig rund 15 Minuten ruhen lassen. ➮ Dann in der Pfanne zu handtellergroßen Pancakes ausbacken.
  • Für die Füllung: 200 g Himbeeren (frisch oder aufgetaut) mit 2 EL Chia vermischen und mindestens 30 Minuten quellen lassen. Durch das Chia wird die Masse fester und die Pancakes lassen sich gut stapeln.
  • Die Pancakes zu einem Turm aufbauen. Die Füllung dabei zwischen die Schichten geben. (Je nach Bedarf dünn oder dick auftragen)
  • Mit Füllung und ganzen Himbeeren garnieren.
  • Reicht für ca. zwei bis drei Türme.
